A delicious savoury and flavourful salad option. Just perfect as we switch into the warmer months that’ll keep you satisfied and also firing all cylinders. This is a powerhouse of protein is a great way to set you up for the day which will also help to keep your blood sugar more stabile to help reduce cravings. These are ingredients you’re likely to have on hand so its easy to put together before rushing out the door.  The perfect 10min meal which will just keep on giving.

Asian chicken salad with tomato chilli jam

Serves 4 | Calories 354.5 | Fat 13 | Carbs 25.5


Tomato chilli jam

  • 1 tbsp peanut oil
  • 1 brown onion chopped
  • 2 cloves garlic chopped
  • 6 ripe tomatoes chopped
  • 4 long red chillies chopped
  • 2 tbsp honey
  • 1/4 cup red wine vinegar
  • 1 tbsp salt


  • 4 cups chopped cabbage
  • 400g poached chicken
  • 1 cup grated carrot
  • 1 cup beanshoots
  • 20 mint leaves
  • 20 basil leaves
  • 20 coriander leaves
  • 2 tbsp crispy shallots
  • 2 tbsp crushed peanuts
  • 4 Lime wedges


  1. Heat oil in a pan, add garlic and onion and sauté until softened.
  2. Add other chilli jam ingredients and simmer for 15-20 minutes.
  3. Once cooled blitz in a blender.
  4. Mix all of the salad ingredients except the nuts, shallots and lime in a bowl and add a little of the jam.
  5. Divide between 4 plates, garnish with the nuts shallots and lime and serve with a side of chilli jam.
