Everyone loves burgers and today’s bun-less twist gives you a great low carb variation helping you to get lean and to enjoy the food you love. Something that we always encourage is finding healthy alternatives and upgrades for the food you enjoy rather than feeling like you have to cut it out completely. This recipe is simple to make and will definitely be a hit amongst the family.



2 large Cos lettuce leaves, wash and trim end

Handful Roquette leaves

1/2 Carrot, grated

Tomato, sliced


Eggplant, sliced 1 inch thick

1 teaspoon oregano

1 teaspoon smoked paprika

1/4 Onion, sliced

1 teaspoon butter

1 teaspoon coconut oil

1/4 Cucumber, sliced

1 button Mushrooms



  1. Place cos lettuce leaf on a plate

2. Add Roquette leaves

3. Add carrot

4. Add Tomato season with a little salt

5. Add cucumber

6. Add butter and coconut oil to a pan on a medium heat

7. Sprinkle oregano and paprika on both sides on eggplant cook till brown and tender

8. Remove from pan add onion, mushroom sauté till caramelised

9. Add egg to hot pan

10. Stack up mushroom egg and onion

11. Top with cos lettuce

12. Serve with kale chips and enjoy
