- 8 eggs (single serve is 2 eggs)
- 1 tbsp oil
- 2 sliced leeks
- 5 minced cloves of garlic
- 1 Jar tomato passata
- 2 birdseye chilli finely diced
- 2tsp sugar
- 2tsp salt
Sautée the leeks in the oil until they have turned golden, then add the diced chilli
Add the passata, sugar, 250ml water and salt and simmer for half an hour until slightly reduced.
Transfer a 1/4 to a small pan and add 2 eggs. Cover and simmer for about 3 minutes until the eggs are cooked to your liking.
Top with herbs and feta if you wish
