Now that we are heading into the warmer months, the BBQ will definitely be a regular part of the repertoire. This recipe is SO simple, and a great reminder of how good ingredients with a straight forward approach can create super healthy meals. We also love incorporating the BBQ when looking to cook large batches of food so that you have it prepped and ready to go. These types of leftovers are great to also use in a salad the next day.

Grilled Steak and Vegetables 

Serves 2 | Calories 364 | Fat 25 g | Carbs 7 g | Protein 24.9 g 

 

Ingredients

  • 2 Porterhouse steaks
  • 1 zucchini
  • 1 red capsicum
  • 2 cups mushrooms
  • 1 tbsp olive oil
  • salt and pepper to taste

 

Method

  1. Begin by slicing up all veggies and then put salt, pepper and olive oil on all ingredients.
  2. Cook the steak on a bbq or on a griddle pan for 5 mins on each side, and then let rest for 10 minutes. 
  3. Grill the vegetables on the bbq/griddle pan until nice and charred, then plate everything together to serve!
