Sometimes after training I’m absolutely ravenous and this hits the spot. It’s quick to prepare and easy to make extra if you want leftovers for lunch the following day. It’s full of cruciferous vegetables which will help support your detox pathways in your body to reduce things such as estrogen dominance.



80g of spinach

80g of rocket

Few sprigs of parsley, pick off leaves

1 Spring onion, finely sliced

Alfalfa sprouts

Bean sprouts

2 radishes, sliced

2 mushrooms, quarter

2 Brussels sprouts, shredded

Half of cucumber, sliced

1 corn cob, cut kernels off cob

2 tablespoons of coconut tzatziki

2 Chicken thighs

Himalayan pink salt

Cracked pepper

Dried chilli flakes

Half a lemon


  1. Preheat oven to 180°C.
  2. Sprinkle salt, pepper, and chilli onto chicken thigh.
  3. Place on baking tray.
  4. Cook for 17 minutes.
  5. Assort all other ingredients into bowl as desired. 
  6. Add chicken into your bowl with a dollop of tzatziki and squeeze of lemon.
  7. Garnish with spring onion. 
  8. Serve and enjoy!
