Overnight oats are a total comfort and family win especially when combined with zesty raspberry goodness. Packed with the benefits of chia seeds which are great for boosting up your fibre and amino acids. We love overnight oats for breakfast or even as a snack when you are craving something which is gooey and sweet.  

Overnight Oats with Raspberry Compote (GF DF VG)

Serves 6 | Calories 275 | Fat 12.2g | C 34g | Protein 6.1g

 

Ingredients

  • 1 cup oats
  • 1 cup quinoa flakes (alternatively do 2 cups of oats)
  • 2 tbsp chia seeds
  • 1/3 cup shredded coconut 
  • 1 grated green apple
  • 1/2 cup coconut yoghurt
  • 1 1/2 cups almond milk

For the raspberry compote

  • 1 cup frozen or fresh raspberries
  • 1 star anise
  • 1 tsp vanilla essence
  • 1 lemon juice and zest removed
  • 1/2 tsp cinnamon 

 

 

Method

  1. Combine the oats, quinoa flakes, chia seeds, grated apple, shredded coconut, yoghurt and almond milk into a mixing bowl and allow to set in the fridge overnight (or at least 2 hours). 

For the raspberry compote

  1. Over a low heat in a small saucepan, add all of the compote ingredients and simmer for 3-4 minutes
  2. Serve over the top of your overnight oats or layer this through your oats if preferred.
