Ingredients

  • 1 cup pitted medjool dates (about 8)
  • 2 cups walnuts
  • 1/2 cup choc protein powder (or vanilla + tablespoon of cacao powder)
  • 3 tbsp hemp seeds + more for rolling 
  • 1/4 tsp himalayan salt
  • 2 tbspoons of natural nut butter (peanut/almond/hazelnut)
  • Optional: dash of almond milk 

Method

  1. Pulse/mix dates in a food processor until small bits remain or forms a ball – remove and set aside
  2. Pulse walnuts in food processor until a fine meal. 
  3. Add protein powder, hemp seeds and salt and pulse a few times to combine
  4. Add in the dates and nut butter and combine until forms a moist dough-like texture (if too wet add more protein powder or hemp seeds, or if not moist enough add a dash of almond milk)
  5. Refrigerate for mixture 10 minutes, then scoop out tablespoon amounts and form into balls
  6. Roll the balls in hemp seeds for extra texture on the outside or cacao for an extra dark choc hit (optional) 

These will keep in an airtight container in the fridge for 1 week or can be frozen for 1 month
