Savoury Healthy Muffins

Sometimes you just need that perfect snack that you can eat on the go and we love muffin shaped foods for this purpose! Instead of grabbing your ‘other’ kind of muffin we thought that having a savoury option on hand would be perfect to keep your metabolism cranking and sugar cravings at bay. These are super simple to make and are your perfect snack or mini meal anytime of day.

 Ingredients

110g quinoa flakes

1 cups of coconut flour

1 teaspoon Himalayan pink salt

1 2/3 cups of coconut milk

3 eggs

1 teaspoons of dried chilli

50g mushrooms

40g kale

1 cup of corn, fresh or frozen

2 teaspoons of butter

50g semi dried tomatoes

Method 

Preheat oven to 180 degrees and line 12 muffin trays with muffin cases or baking paper

In a medium pan on a medium heat, add butter, kale, mushroom and chilli and sauté. Set aside and allow to cool

In a large bowl, add quinoa flakes, coconut flour and salt. Mix with a spoon

Add coconut milk, Corn and eggs.Mix well

Add the cool sautéed veggies and tomatoes. Mix till combined

Spoon batter into 12 muffins tins

Cook for approximately 20 minutes

Set on a cooling rack

Enjoy
