Ingredients

Lemon, (wedge and juice)

Mango cheek, sliced thin

1/4 red onion, finely diced

120g assorted leaves

1/2 tablespoon of capers

80g mini tomatoes, slice in half

2 tablespoons of vinegar

1 teaspoon pink salt

120g smoked salmon, sliced

Dressing

2 tablespoons olive oil

Juice from half the lemon

1/4 teaspoon of mince garlic

Pinch of cracked pepper

Method

  1. In a jar add olive oil, lemon juice, minced garlic pepper shake well (set aside for later)
  2. In a bowl (not steel) add tomatoes, pink salt and vinegar allow to sit for 20 minutes
  3. On a plate add assorted leaves, top with Salmon and mango
  4. Garnish with capes an red onion
  5. Drizzle over dressing. Serve and enjoy!
