Our Superfood Kale Salad is bursting with both flavour and goodness; it doesn’t get any healthier than this. There is something that you will love about the combination of earthy flavours of the quinoa, kale, and black beans with the sweetness of goji & corn. We love this salad because it fuels your body with powerhouse nutrients such as magnesium, selenium, and potassium. Great for energy, detox, and will support any of your health goals. This recipe is great to make in a batch and use for dinner and lunches.

Superfood Kale Salad (V, GF)

Serves 4 | Calories 357 | Fat 17.5g | C 34g | Protein 11g



  • 1 & 1/2 cups of cooked quinoa 
  • 2 corn cobs or frozen corn 
  • 1/4 bunch coriander, finely chopped
  • 1 tbsp butter
  • 3 tbsp olive oil 
  • 100ml lime juice
  • 4 cups of curly leaf kale, finely chopped
  • 1 tsp salt 
  • 125g black beans, rinsed and drained
  • 1 & 1/4 cups of cherry tomatoes 
  • 85g goji berries 
  • 90g pickled jalapenos, finely sliced
  • 20g gruyere cheese, finely grated 




  1. Rinse the quinoa several times before adding it to a medium saucepan with 3 cups of water. Bring to the boil and cook until the water is absorbed and the quinoa is soft – this will take approx 10min, once cooked set aside to cool. 
  2. On a skillet melt some butter and then grill the corn.
  3. Add chopped kale, coriander, jalapeños, goji berries, black beans, and sliced cherry tomatoes to a large bowl.
  4. Mix lime juice, salt, and olive oil for dressing in a separate bowl.
  5. Once quinoa & grilled corn is cooled down, add them to the rest of the salad.
  6. Add the lime dressing, and mix until well combined.
  7. Serve in a bowl and add grated cheese on top. Enjoy!
