Sweet Potato Chicken ‘Nuggets’
Calories 44 per serve (1 Nuggets)
1 lb ground chicken (uncooked)
2 cups uncooked sweet potato, finely grated or use a food processor
2 tbsp butter for cooking
2 tbsp coconut flour
2–3 sprigs green onion, finely chopped
1 tsp sea salt
1/2 tsp black pepper
1 tsp paprika
- Combine all of the ingredients in a large mixing bowl and thoroughly blend together.
- Begin rolling the mixture into small, slightly flattened nuggets about one inch in diameter (this makes 20-25)
- Melt your butter in a frying pan and add your first batch (depending on the frying pan). Once brown flip halfway through. Cook all the way through and until they are nice and crispy
- Allow to cool and serve with your favourite sauce! Use something like a low sugar gluten free ketchup or mustard.
