Sweet Potato Chicken ‘Nuggets’

Calories 44 per serve (1 Nuggets) 


  • 1 lb ground chicken (uncooked)

  • 2 cups uncooked sweet potato, finely grated or use a food processor

  • 2 tbsp butter for cooking

  • 2 tbsp coconut flour

  • 2–3 sprigs green onion, finely chopped

  • 1 tsp sea salt

  • 1/2 tsp black pepper

  • 1 tsp paprika


  1. Combine all of the ingredients in a large mixing bowl and thoroughly blend  together.
  2. Begin rolling the mixture into small, slightly flattened nuggets about one inch in diameter (this makes 20-25)
  3. Melt your butter in a frying pan and add your first batch (depending on the frying pan). Once brown flip halfway through. Cook all the way through and until they are nice and crispy
  4. Allow to cool and serve with your favourite sauce! Use something like a low sugar gluten free ketchup or mustard.
